Holy cow. The past few days, my 11-month-old has been waking up every morning at around 5:27am instead of 7:30am. For the past 8 months, my husband has been embarking on a crazy journey towards training for the Ironman in Texas. It has consumed our lives as a family. Every week, I boil a few sweet potatoes to incorporate into my hubby’s power breakfasts. I mash them up, and sometimes I add them in his pancakes, or even oatmeal. Sweet potatoes are fantastic because they give him that good carbohydrate that he needs as fuel for his Ironman training. They’re also full of fiber and vitamins A, C, B6, and potassium. These date and coconut bars are pretty amazing. I love pretty much anything with a streusel topping, and didn’t want to make the usual jam or fruit crumble. I had a package of dates in my pantry, brought them back to life by hydrating them in a little warm water, pitted them, and proceeded with the recipe.
